Centre was the big winner at the Kudos "K" Awards, after two of its
staff members picked up the employee and general manager of the year
titles at the company's annual awards event, held last week, according to Caterer and Hotelkeeper.
Kudos, the food and venue arm of the Crown Group, named Leah White its employee of the year, while Ben Campbell picked up the general manager of the year award.
Staff from more than 150 Kudos venues were on hand to compete for an award. Prizes included the coveted chef of the year title, won by Graham Strong, Kudos's head chef at the Honourable Artillery Company in London.
Jon Pryce, managing director of Kudos, presented the awards. He said it had been a tremendous year across the business, despite the difficult economic backdrop.
Frank Bordoni, former TV chef and food director at Kudos, developed the three-course menu served to assembled guests, with dishes that aimed to demonstrate that lesser-used produce could still taste exceptional if prepared with a touch of flair.
The menu included a salad of sustainably sourced British mackerel with miso tar, candied pomelo and kalamansi jelly; pressed shoulder of Southdown lamb, courgette and basil purée, confit tomatoes and red pepper; and banana parfait, banana bread, toasted hazelnuts and dulce leche.Frank Bordoni, former TV chef and food director at Kudos, developed the three-course menu served to assembled guests, with dishes that aimed to demonstrate that lesser-used produce could still taste exceptional if prepared with a touch of flair.
