The 90-seat Gregg's Table, with seating for a further 120 outside, will launch next month. It will replace Alfie's Kitchen, the bar and restaurant which has been in operation since the 80-bedroom hotel opened three years ago.

Wallace, who original hails from nearby Peckham, has put together a menu which will include refined versions of favourite dishes from the 1970s such as spam fritters, boiled beef and carrots, lobster thermidor, T-bone steak and Angel Delight.

The hotel's general manager, Robert Holland, said that he was delighted that Wallace has agreed to work with the hotel to create the restaurant, which will complement the hotel's retro design. "Gregg is a boy of the 'hood and exudes everything that is British within the surrounding area," he said.

Wallace opened his first eaterie, Wallace & Co, a café retail project, in Putney in January 2010. Bermondsey Square Hotel is managed by Bespoke Hotels.
